Zucchini Bread

Now that I filled my freezer with these crock pot freezer meals, I didn't have any room left for the grated zucchini that I had been storing. I threw the bags in the fridge to thaw overnight and decided that I would make some zucchini bread this morning.  

For Christmas, my parents gave us older kids 3-ring binders full of our family's favorite recipes. One of the best gifts ever!!! In that binder was this recipe that my mom had received from a neighbor years ago. It's a good one and it's always the one I turn to when I want some good zucchini bread!



Ingredients

3 eggs, beaten
1 c. brown sugar
1 c. granulated sugar
2 c. zucchini, grated
1 c. applesauce (or oil)
2 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 tsp. cinnamon

Directions

In a large bowl, beat eggs. Add sugars and zucchini and mix well.
Add applesauce (or oil) and vanilla and mix in.
In a separate bowl, combine remaining dry ingredients.
Gradually add dry ingredients to zucchini batter and mix well.
Divide between greased loaf pans and bake at 325 degrees for about 1 hour or until toothpick inserted in center comes out clean.

*Makes 5 small loaves. (I had varying sizes of loaf pans so I ended up with 3 different size loaves. Kinda reminds me of the story of Goldilocks & the Three Bears...)
