Southwestern Chicken Chop Salad

This salad has some of my favorite foods combined into one bowl of flavorful goodness. Do you like black beans, corn, chicken or avocado? Why not throw them all together along with some yummy dressing and have a meal that satisfies your cravings?


I usually use romaine lettuce for this salad, but I never specified when I asked Tony to pick up some lettuce for dinner. Even though romaine is better in this salad, it was still delicious and I didn't want to wait to post this. :)


Combine all the salad ingredients in a large bowl.


 In a separate bowl, mix dressing ingredients thoroughly.


 Spoon desired amount of dressing into the salad, then toss to coat well.
Top with crushed tortilla chips before serving.

Salad Ingredients

2 c. chopped chicken (seasoned with salt, pepper, Cajun, etc.)
1 green pepper, diced
2 cans black beans, rinsed
1 can corn
1/2 c. fresh tomato, diced
4-5 green onions, sliced
2 heads of romaine lettuce (or one if they are large)
1/4 c. cilantro, chopped
2 ripe avocados, diced
tortilla chips

Dressing Ingredients

1/4 c. mayonnaise
1 c. plain Greek yogurt
1 Tbsp. ranch seasoning mix
1 Tbsp. taco seasoning

Directions


Combine all the salad ingredients in a large bowl.
 In a separate bowl, mix dressing ingredients thoroughly.
 Spoon desired amount of dressing into the salad, then toss to coat well.
Top with crushed tortilla chips before serving.
