Blackened Chicken with Ginger Cream Sauce

Do you ever feel like cooking a nice meal will not only take all of your remaining energy, but will also take you all evening to prepare? This spicy chicken served on a bed of rice and drizzled with a fresh ginger cream sauce will only take you about 30 minutes from start to finish!

So now if you're short on time, you don't have to deprive your family of a hearty, home cooked meal! Add a side of steamed broccoli and you will have a wonderful meal your family is sure to love!



Ingredients

 2 boneless chicken breast
 olive oil
 rice or quinoa (seasoned, optional)

 Dry Rub
 1/2 tsp. paprika
1/4 tsp. salt
 1/2 tsp. pepper
 1/4 tsp. cayenne pepper
 1/4 tsp. onion powder
 1/2 tsp. cumin

 Cream Sauce

  5 tbsp. plain Greek yogurt
 1/2 tsp. fresh ginger, grated
 juice of 1/2 lemon
 pepper, to taste
2 garlic cloves, minced
1 tsp. parsley leaves, chopped

Here is what you do:

Combine paprika, salt, pepper, cayenne pepper, onion powder, and cumin.


Mix seasonings well and rub onto both sides of each chicken breast.


Heat a skillet on med-high heat. Once warm, add 1-2 Tbsp. olive oil and heat. 
Carefully place chicken in hot skillet and don't move for about 7 minutes. 
Flip and cook through.


Once fully cooked, remove chicken from pan and let rest a few minutes 
before slicing (to help prevent the chicken from drying out).


While chicken is resting, mix up your cream sauce.


Then you're ready to slice your chicken and serve it on a bed of rice (or quinoa) 
drizzled with your cream sauce. :)


I only had white rice in my cupboard, but this would be really good to 
mix your rice up with some lime juice, black beans and corn!
