Easy Raisin Bran Muffins

Bran Muffins....what can I say? I love them! These are a favorite in our household! I have a couple recipes for bran muffins. One is a "cheater" recipe using Raisin Bran cereal. The other is one that uses actual wheat or oat bran. I love them both! Here is my "cheater" recipe!



 Ingredients
 1 1/2 cups raisin bran 
3/4 cup milk 
1/2 cup brown sugar 
1 egg
1/4 oil 
1/2 tsp vanilla 
1 1/4 cup flour 
1/2 tsp salt 
1 Tblsp baking powder 
1 tsp cinnamon



Combine raisin bran and milk. Let set until soft or about 5 minutes. 
 Add brown sugar, egg, oil, and vanilla.

In a separate bowl, combine flour, salt, baking powder, and cinnamon.

Combine wet and dry ingredients. Stir. Don't overmix.

Fill lined muffin cups 2/3 full.

Bake at 400 degrees for 20 minutes or until toothpick comes out clean. 
Serve as breakfast, a snack, or anything in between! 
 Great with a thick spread of peanut butter on top... just because peanut butter makes everything better! :) 

 Note: If you aren't a fan of raisins, you can simply substitute bran flakes for raisin bran.

  1. You know, bran muffins are not something I really remember eating. They definitely are a must try. The pictures make them look so good.
