Simple Caprese Panini

I'm a huge fan of pretty much anything cheese related. I went to Panera Bread a long time ago and had a Panini that was amazing. It was fresh mozzarella, tomatoes, and basil, hot & crispy. It was delicious, and reminded me a lot of a fresh cheese pizza.
 
I attempted to make my own version of this Panini, and I'd say the result was a success! I used dried basil because I didn't have fresh, but if you have access to fresh basil, use it! :)
 
 
Ingredients
 
French baguette
tomato slices
fresh mozzarella
basil
 
Directions
 
Slice your bread in half lengthwise. (If you're bread doesn't have a lot of "air pockets", hollow out the center so the Panini press doesn't smush out all the ingredients.)
Layer your tomato slices, mozzarella, and basil on top.
Place your sandwich on a hot Panini press sprayed lightly with olive oil.
Close the press and let cook until bread is grilled and crispy and the cheese is melted and gooey.

You may want to let it sit for a bit before biting into it. The tomato gets awfully hot. :)

  2. Mom asked the same thing and I think that would be fine! (Maybe just hold the lid down tight while it cooks so it presses it a little more.) :)
