Toasted Coconut & Berry Granola Bars

Whew! A productive day today! :) Made a menu, went grocery shopping, cleaned our apartment, made homemade laundry detergent, body wash, homemade cereal, cleaned and cut a ton {okay, maybe not a "ton"} of fruit to freeze for smoothies, and made these super yummy granola bars! {AND stayed in bed until 10:30am! That never happens...}

The base of this recipe actually belongs to my sister. You know when your family passes a recipe from one person to the other, and since it's SO good, you're completely okay with taking the credit when someone offers a compliment? This is one of those recipes. It belongs to my sister, Sarah. I have no idea if she made it up or got it passed on to her. Honestly, I don't think I care. It's really good, and that's all I need to know! The original recipe was posted by my other sister, Laura, back in January. (Click here for that post!)

It's a yummy, no-bake granola bar that can be tweaked to your fit your desires. 
The following is just what I made. :)
{As you can see, it was very warm in our apartment, and the chocolate had a hard time setting back up.}


Ingredients

2 c. quick oats
2 c. rice crispies
1/3 c. craisins
1/3 c. dried blueberries
1 c. coconut, toasted
1 Tbsp. chia seeds
1 Tbsp. flaxseed
1/2 c. brown sugar
1/2 c. corn syrup
1/2 c. crunchy peanut butter
1 tsp. vanilla
1/4 c. chocolate chips

Directions

In a large bowl, combine oats, rice crispies, dried fruit, coconut and seeds. Set aside.
In a medium saucepan, mix the brown sugar and corn syrup.
Bring to a boil.
Remove from heat and stir in peanut butter and vanilla.
Quickly pour into the dry oat mixture.
Stir until thoroughly moistened.
Working quickly, press into a greased 9x13 pan.
Sprinkle chocolate chips on top and press into the bars.
Let cool before slicing and wrapping.
