Saint Patrick's Day Rolo Message

My sister and I were having a conversation the other day.  We were talking about all the cute little crafts they have on Pinterest for the holidays.  We concluded that until God blesses us with children, our dear husbands are going to be the beneficiaries of these adorable gifts.
Although they are grown men, I think they enjoy the little surprises they receive.  Who wouldn't?!  To me, it would be like getting a letter in the mail...someone took a little time to do something for you.  How can one not like that. :)
I thought this idea was adorable.  Taking a ROLO, you wrap it with a homemade wrapper that says, "You're the pot of gold at the end of my rainbow!"  After completing the little package, I hung it in his car so he will see it in the morning. :)  Hopefully it will put a smile on his face and it will also remind him that he better be wearing green. ;)

THINGS NEEDED:
Rolos
Blank paper/Picture you want to color
Crayons/Markers
Tape
Ziploc
String
Scissors

Carefully remove paper from Rolo package.  Using the printed picture or blank paper, trace the Rolo paper. Cut it out.

Color and write your message.

Tape one end.  Tightly wrap paper around candy and tape again.

Using the scissors, cut little holes in the top of the Ziploc and insert string.  As you can see, I put another little picture in too.  Have fun with it and do whatever you would like.

Here are two ideas where to hang it.  You can put it anywhere.  Hang it in the fridge if he grabs his lunch in the morning, hang it on the main door so he sees it when he is leaving, tape it to the bathroom mirror.... You get the picture.  :)

Hope everyone has a blessed Saint Patrick's Day!!

Rainbow in a Jar!

As a little child you dream of a pot of gold being at the end of the rainbow and leprechauns being right there protecting their pot o' gold. Since St. Patrick's Day is coming just around the corner, I figured I'd make this easy treat for the kids to help celebrate this holiday!

What you will need:
A glass jar
Rolos
Skittles (Original Flavor)
First, set the rolos at the bottom of the jar to represent the gold!
(In place of the rolos, you could use chocolate nuggets or gold coins)

Next, layer the skittles...red, orange, yellow, green and, lastly, purple!

And there you have it! Your own pot of gold!

Guac on a Shamrock!

Guac on a Shamrock
for
St. Patrick's Day!

 I love St. Patrick's Day!
I was thinking of what I could make for a special treat.  The first thing I thought of was clover-shaped sugar cookies frosted with a green icing. Then I thought....it is Lent AND I should stay away from making sweets for my children.  So, I thought of something that was fun to make and yummy to eat!

All you need is:
Flour Tortillas
Coconut oil (or butter or oil of your choice)

Spread a cookie sheet with coconut oil.
Using kitchen shears -
Cut the tortillas in a shamrock shape.
(I cut about 3 shamrocks out of a small tortilla)

You will notice some are 'cut creatively'.....
that is my eight year old son's handiwork!
We had fun!  ☺

******************************************************************************

Bake at 425 degrees for about 7 minutes just until they get a bit browned.
The coconut oil helps them crisp up and oh, it gives such a yummy flavor!

(Of course, you can serve this anytime in any shape!)
I was amazed with the flavor of the chips.  We will definitely do this again in the future! It was so pleasing to be able to make something fun and tasty that didn't contain sugar!  : )

*******************************************************************

Then comes the Guacamole!

 You will need:

3 ripe avocados
2 TBS. lime juice
1/2 tsp. cumin
1/2 tsp. cayenne pepper
1/2 tsp. sea salt
1/2 medium onion, diced
2 Roma tomatoes, seeded and diced
1 TBS chopped cilantro
1 clove garlic, minced

Directions:

In a medium sized bowl place the scooped avocado pulp and lime juice in a bowl.
Using a potato masher add the salt, cumin, and cayenne and mash.

Then fold in the onions, tomatoes, cilantro, and garlic.

Let it sit at room temperature for 1 hour...

...and then serve with your shamrocks. ☺
I think you will have some happy faces for this very special day!

Have a HAPPY SAINT PATRICK'S Day!

Just a Note:  I used all the 'extra' tortilla shells by cutting them in different shapes for chips and baked them at the same time I baked the shamrocks.
It was a nice feeling knowing that these were made without any preservatives or without anything bad for you.  : )

St. Patty's Clover Cupcakes

Saint Patrick's Day is quickly approaching and I thought it would be fun to make some cupcakes to celebrate. My little brothers' wrestling tournament is on Sunday and I'm hoping to be able to see them compete. When I do go, I don't always bring treats, but it's fun every once in awhile. Maybe celebrating a St. Patty's Day Tournament with Clover Cupcakes might give them a little boost to win! :)

I would normally make these just beforehand, but we've got such a busy weekend ahead of us that I won't have time. I also cheated and used store bought cake mix and frosting so it would be quick. These cupcakes definitely don't look like they came from the bakery, but if you are looking for a quick (and EASY!) treat, these are the way to go! They turned out yummy, but if you have the time, make it from scratch. They are always better that way. :) (At least the frosting is!)

Prepare batter as directed. (I used a Betty Crocker white cake mix.)

Mix in some green food coloring.

Scoop into prepared cupcake liners. I'm a little sloppy. :)

I poured the leftover batter into a small (6x6?) pan.

 Bake as directed.
(OR....I baked mine for 5 minutes at 350degrees then about 20 minutes at 300degrees.
Doing this helps the cupcakes not dry out and they get nice and fluffy.)

Set on a cooling rack and let cool completely.

 Mix up your frosting!
(I used cream cheese frosting and tinted it with a little green food coloring.)

Frost your cupcakes.
I'm totally not a pastry chef, so mine really look "homemade".
I really need to get a set of frosting tips! :)

Top your cupcakes.
On the market right now is a special edition of Lucky Charms cereal that has four leaf clovers. The box cost me about $2 at Walmart and I just picked out the clovers.

That's it!

Oh yeah, the cake is still hanging out. :)

Frost with your leftover frosting. (If you didn't eat it all already!)

Sprinkle with some clovers. :)

Check these out!
