For deer hunting opener, it's been a tradition in our family to send the hunters off with a hearty breakfast each morning. Knowing that we were going to be up very early (4:00AM, to be exact!), I decided to make some coffee cake to add to the meal. I figured it would be beneficial to have one less thing to cook in the wee hours of the morning. :)
I've made this coffee cake a few times with the residents at my work, and it is always a hit! We always have to be sure we have enough to go around, because there's never any leftover. :)
Ingredients
2 c. flour
2 Tbsp. baking powder
1 tsp. cinnamon
1 tsp. salt
1 c. milk
1 c. sugar
1/2 c. butter, melted
2 eggs
Topping:
1/2 c. sugar
2 tsp. cinnamon
Directions
Combine flour, baking powder, cinnamon, and salt in a large mixing bowl.
Whip in milk, sugar, melted butter, and eggs.
Pour into a greased 9x13 cake pan and set aside.
In a small bowl, stir together the sugar and cinnamon for the topping.
Sprinkle it over the cake mixture.
Using a butter knife, cut it through the mixture, swirling it around.
Bake at 350 degrees for 15-25 minutes, or until toothpick inserted in center comes out clean.
