Spicy Chipotle Black Bean Burgers

My husband once told me that he likes black bean burgers, and asked if I would try to make them sometime. I've never had them before so I wasn't exactly sure how they would taste or if I would like them. I've been looking at many recipes, and decided to give it a try. He picked up a spicy chipotle pepper spread (Hidden Valley brand) to top the burgers with, so I tossed a bit in the mixture as well.

I definitely prefer a full on "meat burger", but if you don't have that option, or are just in the mood for something a little different....this is a good choice! These burgers are spicy and hold their shape, but are softer in the center when you bite into them. Load 'em up with your favorite toppings and serve 'em on a warm, toasty bun. :)



Ingredients

1 can black beans, drained
1/4 c. red onion, chopped
5 cloves garlic, minced
1 tsp. Hidden Valley Spicy Chipotle Spread
1/2 tsp. cumin
1/2 tsp. paprika
1/4 tsp. red pepper flakes
1/2 tsp. sea salt
1 Tbsp. olive oil
1/2 c. uncooked oats
1/2 c. cilantro (loosely filled)
panko bread crumbs, optional


Directions

In a food processor, combine black beans, onion, garlic, chipotle spread, cumin, paprika, red pepper flakes, sea salt, and olive oil. Pulse until combined.
Add oats and cilantro. Once again, pulse until combined.
Form into patties and refrigerate for 15-30 minutes.
Remove from refrigerator and gently press patties into the bread crumbs on each side.
In a large (and oiled) skillet, fry patties on medium-high heat for 3-5 minutes on each side.
Serve on a toasted bun with your favorite burger toppings.

Makes 3-6 patties, depending on size.

Pulse until combined.


Add oats and cilantro. 


Once again, pulse until combined.
