My husband has this thing where sometimes he just craves buffalo chicken. I'm not going to argue with him, I'm the same way! It doesn't matter if it's wings, pizza, or even a buffalo chicken garbage bread that my mom started making. (She HAS to post that sometime.... it's amazing!) Tony has asked me to make that 3 times in one week before. Talk about a healthy menu...
This past weekend, we wanted something buffaloey (I don't know if that's a word, but I'm using it anyway), and we decided to make a homemade buffalo chicken pizza.
My mom has an amazing pizza dough recipe, but I can never get mine to taste like hers. So, we thought we would try something a little different. This recipe claimed to be a copycat of Papa John's crust. {Tony LOVES Papa John's.} We concluded that, though this crust was good, it didn't really taste like Papa John's. But, it was super quick, and that was handy! :)

Ingredients
2-3 cups flour
2 Tbsp white or brown sugar
2 1/4 tsp fast rising or instant yeast
1/2 tsp salt
1 c. hot water
2 Tbsp oil
a little oil & seasonings to brush on crust
Directions
Combine 1 cup of the flour, sugar, yeast, and salt in a med-large bowl.
Gradually add the hot water and oil until well moistened.
Beat on medium speed for 2 minutes.
With a wooden spoon, continue stirring in remaining flour until dough begins pulling away from the sides of the bowl. (Don't add too much flour!)
Turn onto a floured surface and knead until smooth.
Loosely cover and let rise 15 minutes.
Divide into 2 pieces, and roll out.
Place on greased pan, or on a sheet of parchment paper.
Randomly prick with a fork.
Cover and let rest another 10-15 minutes.
Brush crusts w/oil and seasonings.
Prebake crusts at 450 degrees for approximately 5 minutes.
Top with all the toppings.
Bake again for 5-10 minutes, or until done.
*Makes about (2) 12 inch pizza crusts.

{If you'd like to season the dough, go ahead and add those now. Italian seasoning, garlic powder, onion powder....you can pretty much use anything.}

{We used straight buffalo hot sauce.}
Top with all the toppings and cheese.
{Ours is simple...we just put red onion and chicken (that was, of course, simmered in buffalo sauce while the dough was rising) and mozzarella cheese.}
Don't forget the cheese! :)
Bake again for 5-10 minutes, or until done.
{I baked ours with the parchment directly on the racks. It worked well, and was very crispy! In fact, I may have overcooked them a little. Hehe.}
Now how can you say no to that?!
**Just so you know, you can go ahead and make both crusts now, or you can freeze the extra also.
YUMMY!!! A must try! I have never tried that yeast. I always follow mom's recipe! Looks great though!
