Along with the new year also comes resolutions for many people. One that I really want to focus on for 2013 is to start eating healthier. One of the dishes I have never made, but wanted to try, was cheesy cauliflower mash. It was definitely better than I was expecting and is a nice alternative when I’m craving cheesy, calorie-loaded mashed potatoes.
Ingredients
1 large head cauliflower, diced
1-1 1/2 c. chicken broth
2 Tbsp minced garlic
3 Tbsp sour cream
2-3 green onion, chopped
1 Tbsp butter
4 oz freshly grated cheese (I used cheddar)
1/8 tsp red pepper
salt & pepper (to taste)
Directions
Bring cauliflower and broth to a boil.
Stir occasionally to cook evenly since cauliflower won’t be immersed.
Once cauliflower is tender (most of the broth will be gone), transfer cauliflower to a food processor.
Add remaining ingredients and blend until smooth.
*Makes approximately 6 servings.
