My husband and I go in spurts with eating cold cereal. Sometimes it seems like we can't keep it on the shelf, and other times I'll toss it out because I really have no idea how long it's been there. He recently found a cereal that we both really like. It was the Bear Naked brand Almond Crisp cereal. The only downside was that it costs almost $5 a box where we live. I have a hard time paying that much for cereal, even if it is healthy!
I decided that I would try to create my own version of their cereal. I modified a Quick'n'Crunchy Granola recipe {click here for the original recipe} from food.com for my clusters, and took it from there.
We were both satisfied with how it turned out! If you try it, I'd be happy to hear what you think! :)
Ingredients
1 c. butter
1c. honey
3/4 c. brown sugar
3 tsp. vanilla
1/2 Tbsp. cinnamon
6 c. old fashioned rolled oats
4 c. quick cooking oats
2 Tbsp. chia seeds
1 Tbsp. flaxseed
1 1/2 c. raisins
1/2 c. sliced almonds
1/4 c. pepita seeds
1 box (18oz) Grape-Nuts flakes (or Corn Flakes)
Directions
Preheat oven to 350 degrees.
In a large, microwave-safe bowl, melt butter in the microwave.
Add honey and heat for another 45 seconds.
Stir in the brown sugar.
Add vanilla and cinnamon.
Gently mix in the oats until all oats are moistened.
Sprinkle in the chia seeds and flaxseed and stir.
Spread evenly onto 2 large baking sheets.
Place in the oven and set timer for 10 minutes.
When timer goes off, gently stir and return to oven, while also turning oven down to 300 degrees.
Bake 10-20 minutes longer or until golden brown, gently stirring, if needed.
While granola is baking, combine raisins, almonds, and pepita seeds in a small bowl and mix well.
Once granola is golden brown, remove from oven and gently stir in raisin mixture.
Transfer to a clean counter to cool.
Once cooled, gently stir in Grape-Nuts flakes.
Store in airtight containers.
